Ingredients

Instructions

  1. 1

With a sharp knife, chop the beef into pieces smaller than a chickpea.

  2. 2

Thinly slice the onion and rub it with the sumac and a pinch of the salt. Dice the tomato small and chop the parsley.

  3. 3

Put the beef in a wide skillet with a lid; cook covered over low heat for 25-30 minutes until it releases its juices and becomes tender in them.

  4. 4

Uncover and let the liquid evaporate; add the sunflower oil, cumin, pepper flakes and remaining salt and fry over high heat for 5-6 minutes until lightly browned.

  5. 5

Warm each lavash for 10 seconds per side, pressing it into the meat juices at the edge of the pan.

  6. 6

Divide the beef among the lavash, top with tomato, sumac onion and parsley and roll up tightly. Serve hot.
