Antalya-style piyaz: tender white beans in a lemony tahini dressing, topped with red onion, parsley, tomato and boiled egg. Great with meatballs or as a filling salad on its own.
Ingredients
Instructions
- 1
Crush the garlic. In a bowl mix the tahini, lemon juice, vinegar, garlic, cumin and half the salt; whisk in the water little by little until the sauce is pourable and creamy.
- 2
Thinly slice the red onion and rub it with the remaining salt. Chop the parsley, dice the tomato small and quarter the eggs.
- 3
Put the drained beans on a wide serving plate, add two-thirds of the tahini sauce and fold gently without crushing the beans.
- 4
Scatter the onion, parsley and tomato on top, drizzle with the remaining sauce and arrange the eggs.
- 5
Warm the olive oil in a small pan for 30 seconds, add the pepper flakes, take off the heat and drizzle over the salad. Serve.
