
A classic Turkish olive oil dish of green beans slowly braised with onion and tomato, served warm or cold; vegan and gluten-free.

Trim the green beans and remove any strings, wash them and cut into 4-5 cm pieces. Thinly slice the onion into half-moons; peel and dice the tomatoes.

Heat the olive oil in a wide pot and cook the onion over medium heat for 5 minutes until soft and translucent.

Add the beans and stir. Cover and cook over medium heat for 10 minutes, stirring now and then, until they turn a deeper green.

Add the tomatoes, sugar and salt and pour in the hot water. Cover and simmer over low heat for 45 minutes, until the beans are very tender and the liquid has reduced.

Turn off the heat and let the dish cool to room temperature in the covered pot. Serve warm or cold, as is traditional for Turkish olive oil dishes.
