
A Turkish home classic: fried whole eggplants split open, filled with ground beef, onion and peppers, then baked in a light tomato sauce. Serve with rice or yogurt.

Leave the stems on the eggplants, peel them in stripes and pat them completely dry.

Heat the sunflower oil in a large frying pan and fry the eggplants over medium-high heat for 8-10 minutes, turning, until soft and browned on all sides. Drain on paper towels.

In the oil left in the pan, cook the finely chopped onion over medium heat for 4-5 minutes, add the crushed garlic, then add the ground beef and cook for 6-8 minutes until the liquid evaporates.

Set aside a few green peppers for the top and chop the rest into the pan. Dice half of the tomatoes and add them with half of the tomato paste, half of the salt and the black pepper; cook for 5 minutes. Remove from the heat and stir in the chopped parsley.

Arrange the eggplants in a baking dish, slit each one lengthwise, open it with a spoon and fill with the meat mixture. Top each with a slice of the remaining tomato and the reserved peppers.

Mix the remaining tomato paste with the water and remaining salt and pour it into the dish. Bake at 180 °C for 30-35 minutes, until the sauce thickens and the tomatoes are soft.
