Ingredients

Instructions

  1. 1

Rinse the cleaned octopus (ink sac and beak removed) and put it in a wide pot. Do not add water; cover and cook over low heat for 50-60 minutes in the liquid it releases, until a fork slides in easily.

  2. 2

Lift the octopus out and let it cool for 15 minutes; slice the tentacles into 1 cm rounds and cut the body into small pieces.

  3. 3

Thinly slice the red onion, dice the red bell pepper and finely chop the parsley.

  4. 4

Crush the garlic and whisk it in a bowl with the olive oil, lemon juice, vinegar and salt.

  5. 5

Combine the octopus, onion, pepper and parsley in a large bowl, pour over the dressing and toss gently.

  6. 6

Chill for at least 30 minutes and serve cold.
