Cut the potatoes into matchsticks, rinse in cold water to remove the starch and pat completely dry. Slice the tenderloin into thin strips, finely chop the onion and grate the tomato.

Crush the garlic and whisk it into the yogurt with a pinch of salt; leave at room temperature.

Heat the sunflower oil in a wide skillet; fry the potatoes in batches for 4-5 minutes until golden and crisp, drain on paper towels and sprinkle with a pinch of salt.

Melt the butter in another pan; sauté the beef strips over high heat for 4-5 minutes until their juices evaporate and they brown.

Add the onion and cook for 3 minutes, then the tomato paste for 1 minute; add the grated tomato, remaining salt and black pepper and simmer for 5 minutes until the sauce thickens.

Spread the potatoes on a serving platter, spoon the garlic yogurt over them and pile the hot beef with its sauce in the center; serve immediately.
