
Kayseri-style Turkish dumplings: paper-thin dough filled with spiced ground beef, folded into tiny parcels and served with garlic yogurt and a chili-butter sauce.

Put the flour in a bowl, add the eggs, water and half of the salt and knead for 8-10 minutes into a smooth, firm dough. Cover and rest for 30 minutes (not included in the total time).

Grate the onion very finely and knead it with the ground beef, black pepper and remaining salt for 2-3 minutes to make the filling.

Divide the dough into 3 pieces. Roll each out on a floured surface to 1-2 mm thick and cut into 2-3 cm squares.

Place a chickpea-sized piece of filling in the center of each square, bring the four corners together on top and pinch tightly to seal.

Cook the dumplings in a large pot of boiling water for 12-15 minutes, stirring occasionally, then drain.

Meanwhile, whisk the crushed garlic into the yogurt. Melt the butter in a small pan, add the tomato paste and red pepper flakes and sizzle for 1 minute; remove from the heat and stir in the dried mint.

Divide the manti among plates, spoon over the garlic yogurt, drizzle with the hot butter sauce and serve immediately.
