A hearty Bursa-style dish: toasted bread cubes topped with yogurt, meatballs in tomato sauce and sizzling butter.
Ingredients
Instructions
- 1
Grate the onion. Knead the beef with the onion, breadcrumbs, cumin, pepper and 6 g of the salt for 3-4 minutes. Rest for 10 minutes, then shape into walnut-sized meatballs.
- 2
Heat a non-stick pan over medium-high heat and cook the meatballs for 8-10 minutes, turning, until browned all over and cooked through.
- 3
Grate the tomatoes. Melt 20 g of the butter in a saucepan and cook the tomato paste for 1 minute. Add the tomato and remaining salt and simmer for 8-10 minutes until thickened. Add the meatballs and simmer together for 2 minutes.
- 4
Meanwhile, cut the bread into cubes, spread on a tray and toast in a 200 °C oven for 8-10 minutes until crisp.
- 5
Whisk the yogurt at room temperature until smooth.
- 6
Put the bread cubes on plates and drizzle with some sauce. Add the yogurt and meatballs, then spoon over the rest of the sauce.
- 7
Heat the remaining butter in a small pan until foaming, pour over the plates and serve immediately.
