Ingredients

Instructions

  1. 1

Heat the oven to 175 °C and line a tray with baking paper. Set aside 24 whole almonds for decoration and roughly chop the rest.

  2. 2

Beat the soft butter and sugar with a mixer for 3-4 minutes until pale and fluffy.

  3. 3

Add the egg and vanilla extract and beat for 1 more minute.

  4. 4

Sift in the flour and baking powder and add the chopped almonds; mix by hand just until the dough comes together, without kneading.

  5. 5

Roll walnut-sized pieces into balls, space them on the tray and press a whole almond into the center of each.

  6. 6

Bake at 175 °C for 15-18 minutes until lightly golden underneath; cool on the tray for 10 minutes before moving.
