Ingredients

Instructions

  1. 1

Mix the flour, yeast and salt; add 140 g of the lukewarm water and the sunflower oil and knead for 8-10 minutes into a firm, smooth dough. Cover and let rise in a warm place for 40 minutes.

  2. 2

Divide the dough into 8 equal pieces and roll each into a thin rope 50-55 cm long.

  3. 3

Lay two ropes side by side, twist them together and join the ends into a ring about 15 cm across, making 4 simits.

  4. 4

Thin the pekmez with the remaining 25 g of water and brush it all over the rings. Spread the sesame seeds on a flat plate and press the rings into them until fully coated.

  5. 5

Place the simits on a parchment-lined baking tray and let rest for 15 minutes while you preheat the oven to 220 °C.

  6. 6

Bake for 18-20 minutes until deep golden brown. Let cool slightly on a wire rack and serve.
