Traditional Greek-Turkish pasteli: toasted sesame seeds bound with honey and a little sugar into snappy, crunchy bars. A gluten-free snack that travels well.
Ingredients
Instructions
- 1
Toast the sesame seeds in a dry skillet over medium-low heat, stirring constantly, for 5-6 minutes until golden and fragrant; transfer to a bowl.
- 2
In a small saucepan bring the honey and sugar to a boil over medium heat; cook, stirring, for 3-4 minutes until the foam subsides and it turns a slightly deeper amber.
- 3
Add the toasted sesame, stir quickly and keep on the heat for 1 more minute.
- 4
Pour the mixture onto a sheet of parchment, cover with a second sheet and roll it out with a rolling pin into a 5-6 mm thick rectangle.
- 5
Peel off the top sheet and, while still warm, cut into 4 bars with a sharp knife. Let cool completely for 30 minutes until hard, then separate; store in an airtight container.
