Yeasted dough rounds pan-fried until puffed, crisp outside and pillowy inside; the warm star of a weekend Turkish breakfast.
Ingredients
Instructions
- 1
Mix the lukewarm water and milk in a bowl; add the dry yeast and sugar and let stand for 5-10 minutes until foamy.
- 2
Put the flour and salt in a large bowl, make a well and pour in the yeast mixture; knead for 5-6 minutes into a soft dough that is slightly sticky.
- 3
Cover the bowl and let the dough rise in a warm place for 45-60 minutes, until doubled.
- 4
Divide the dough into 16 equal balls. Oil your hands with a few drops of the oil, flatten each ball into a round about 0.5 cm thick and press the center lightly with a finger.
- 5
Heat the remaining sunflower oil in a deep 20 cm pan over medium heat; fry the rounds in batches of 3-4 for 1-1.5 minutes per side, until puffed and golden.
- 6
Drain on paper towels and serve hot.
