Soft, milky Turkish breakfast rings rolled around a savory ground beef filling, brushed with egg and topped with sesame seeds. Best warm with tea.
Ingredients
Instructions
- 1
Mix the lukewarm milk, water, sugar and yeast and leave for 10 minutes until foamy. Add the flour, 6 g of the salt, the melted margarine, sunflower oil, the whole egg and the yeast mixture, and knead for 8-10 minutes into a soft, non-sticky dough. Cover and let rise in a warm place for 1 hour.
- 2
For the filling, finely chop the onion. Cook the ground beef in a skillet over medium heat without added fat for 6-7 minutes, add the onion and cook 4-5 minutes more.
- 3
Stir in the tomato paste, black pepper, red pepper flakes and the remaining salt for 2 minutes, then let the filling cool completely.
- 4
Divide the risen dough into 12 balls. Roll each out on a floured surface into a rectangle about 25x10 cm, lay a line of filling along the long edge and roll up tightly.
- 5
Stretch each roll a little, twist it once and join the ends to form a ring. Space them on a parchment-lined baking sheet, cover and let rest for 20 minutes more.
- 6
Heat the oven to 180 °C. Beat the egg yolk with 1 tablespoon of water, brush it over the rings and sprinkle with the sesame seeds.
- 7
Bake at 180 °C for 25-30 minutes, until golden brown. Serve once slightly cooled.
