Seared beef slowly braised with carrots and onion until tender, served with a gravy made from its own juices. A high-protein weekend dinner.
Ingredients
Instructions
- 1
Pat the beef dry and rub all over with salt and pepper; tie it in a few places with kitchen string so it keeps its shape.
- 2
Heat the olive oil and 15 g of the butter in a heavy pot over high heat. Sear the beef for 8-10 minutes, turning, until browned on all sides.
- 3
Cut the carrots into large chunks and quarter the onion. Add the vegetables, whole garlic cloves, bay leaf and water and bring to a boil.
- 4
Cover and cook over the lowest heat for 1.5-2 hours, turning the meat occasionally, until a fork slides in easily.
- 5
Rest the beef on a board for 10 minutes; set the vegetables aside and strain the cooking liquid.
- 6
For the gravy, melt the remaining butter in a small saucepan, add the flour and cook for 1 minute. Whisk in the strained liquid and simmer for 3-4 minutes until thick.
- 7
Remove the string and slice the beef thinly; serve with the carrots and onion, with the gravy poured over.
