Preheat the oven to 175 °C and line a 23x13 cm loaf tin with baking paper.

Mash the bananas with a fork in a large bowl; whisk in the melted, slightly cooled butter, brown sugar, eggs and vanilla.

Mix the flour, baking soda and salt in another bowl and add to the banana mixture; fold with a spatula just until no flour shows, then stir in the walnuts.

Pour into the tin and bake for 55-60 minutes, until a toothpick in the centre comes out clean. If the top browns too quickly, cover loosely with foil for the last 15 minutes.

Leave in the tin for 10 minutes, then turn out onto a rack; slice once completely cool.
