    Melt the butter over low heat in a wide pot; add the semolina and almonds.

    Toast over low-medium heat, stirring constantly, for 20-25 minutes until the semolina is light golden and fragrant.

    Meanwhile, heat the milk and sugar in another pot until the sugar dissolves and the milk is just about to boil.

    Take the semolina off the heat and carefully pour in the hot sweetened milk (it will spatter), stirring.

    Return to low heat and stir for 2-3 minutes until the milk is absorbed; turn off the heat.

    Cover the pot with a paper towel and the lid and let it steep for 15 minutes; fluff with a fork and serve.
