Cubed potatoes stewed with ground beef, green pepper and tomato until tender in a savory tomato broth. A filling, budget-friendly, gluten-free pot dish.
Ingredients
Instructions
- 1
Peel the potatoes, cut into 2 cm cubes and keep them in water so they don't brown. Finely chop the onion, slice the peppers into rings and grate the tomatoes.
- 2
Heat the sunflower oil in a wide pot over medium heat and cook the onion for 3-4 minutes. Add the beef and cook for 6-7 minutes until the liquid evaporates.
- 3
Stir in the tomato paste for 1 minute; add the peppers and cook for 2 minutes, then the grated tomato for 3 minutes.
- 4
Add the drained potatoes, hot water, salt and black pepper and stir.
- 5
Bring to a boil, cover and simmer over low heat for 25-30 minutes, until the potatoes are tender and the liquid has reduced. Rest for 10 minutes and serve.
