Buttery rolled and crinkled pastry nests filled with pistachios and soaked in cool syrup. A crisp, syrupy Turkish dessert for holidays and special occasions.
Ingredients
Instructions
- 1
Make the syrup: bring the sugar and water to a boil, simmer over low heat for 10 minutes, add the lemon juice, boil 1 minute more and let cool completely.
- 2
Coarsely grind the pistachios and set aside a third for the centers. Melt the butter and preheat the oven to 180 °C.
- 3
Cut the yufka sheets into quarters. Brush each piece with butter, sprinkle some pistachios along one edge and roll it loosely around a thin rolling pin or skewer.
- 4
Push the roll from both ends toward the middle to crinkle it, slide it off the pin and curl it around itself into a nest shape.
- 5
Arrange the nests snugly in a buttered baking tray, drizzle with the remaining butter and bake for 35-40 minutes until golden.
- 6
Slowly pour the cool syrup over the hot pastry; fill the center of each nest with the reserved pistachios and let stand 2 hours to absorb the syrup before serving (not included in the total time).
