A light, wobbly Turkish pudding made without milk, just water, cornstarch and sugar. Served chilled and dusted with powdered sugar; a vegan, gluten-free dessert.
Ingredients
Instructions
- 1
Put the cornstarch in a saucepan, add about 1 cup of the water and whisk until completely smooth.
- 2
Add the remaining water and 100 g of the sugar; cook over medium heat, stirring constantly, for 10-12 minutes until thick and boiling.
- 3
Once it bubbles, lower the heat and cook for 3 more minutes, stirring; the pudding should look glossy and slightly translucent.
- 4
Divide among bowls, let cool slightly, then chill in the fridge for at least 2 hours.
- 5
Grind the remaining 20 g of sugar to a fine powder in a mortar or spice grinder and dust it over the puddings just before serving.
