A classic Turkish pudding with a caramelized bottom, rolled up for serving. Eaten chilled with coffee or tea.
Ingredients
Instructions
- 1
Set aside 40 g (about 3 tbsp) of the sugar. Whisk the rest of the sugar, the rice flour, cornstarch and flour into the cold milk in a saucepan until smooth.
- 2
Cook over medium heat, stirring constantly, for 15-20 minutes until thick enough to coat the back of a spoon; take off the heat and stir in the vanilla.
- 3
Grease a 25x35 cm stovetop-safe metal pan with the butter and sprinkle the reserved sugar evenly over the base.
- 4
Pour in the pudding. Set the pan over medium heat on the stove and keep moving it so every part browns evenly, for 8-10 minutes, until the bottom is a deep caramel color.
- 5
Cool to room temperature, then chill for at least 4 hours (not included in the total time).
- 6
Cut into squares, lift with a spatula and roll each piece with the caramelized side outward to serve.
