Chicken thighs marinated in yogurt, tomato and pepper paste and spices, stacked and oven-roasted, then shaved thin. High-protein and gluten-free.
Ingredients
Instructions
- 1
Trim excess fat from the chicken thighs and butterfly the thick parts so they are an even thickness.
- 2
Grate the garlic. Whisk the yogurt, milk, sunflower oil, tomato paste, pepper paste, garlic, salt, cumin, pepper flakes, black pepper and thyme in a bowl.
- 3
Coat the thighs well in the marinade; cover and refrigerate for at least 4 hours, ideally overnight.
- 4
Preheat the oven to 200 °C. Stack the thighs tightly in a loaf pan, pressing them down.
- 5
Roast at 200 °C for 50-55 minutes, until browned on top and cooked through. Rest for 10 minutes.
- 6
Turn the block out and shave it vertically into very thin slices with a sharp knife. Toss the slices in a hot pan for 2 minutes until the edges caramelize and serve hot.
