Finely chop the onion, slice the peppers into rings, and peel and dice the tomato.

Heat the butter and sunflower oil in a pot; sauté the onion over medium heat for 4-5 minutes until soft, add the pepper and cook 2 more minutes.

Stir in the tomato paste and cook for 1 minute until fragrant, then add the tomato and cook for 3-4 minutes until it releases its juices.

Add the bulgur and stir for 2 minutes; pour in the hot water, add the salt and stir.

Bring to a boil, cover and cook on low heat for 15 minutes until the water is absorbed.

Remove from the heat, place a paper towel under the lid and let it steam for 10 minutes; fluff gently and serve.
