
A chunky Mexican dip of ripe avocado mashed with lemon, red onion, tomato and chili. Served chilled as a sharing starter.

Very finely chop the red onion, the deseeded chili and the parsley; remove the seedy core of the tomato and cut it into small dice.

Halve the avocados, remove the stones and scoop the flesh into a bowl; add the lemon juice and salt and mash with a fork to a chunky purée.

Stir in the onion, chili, parsley and tomato; check the salt.

Press plastic wrap onto the surface to stop browning and serve right away or within 1 hour.
