Whole apples dipped in hard-crack sugar syrup for a glassy, crunchy shell. A fairground classic that is vegan and gluten-free.
Ingredients
Instructions
- 1
Wash the apples and dry them thoroughly; the skins must be completely dry. Twist off the stems and push wooden sticks firmly into the stem ends.
- 2
Put the sugar and water in a small, narrow saucepan. Bring to a boil over medium heat without stirring and cook for 10-12 minutes until the syrup reaches 150 °C and turns light amber.
- 3
Remove from the heat and tilt the pan. Dip and twirl each apple to coat it completely, letting the excess drip off.
- 4
Stand the apples on parchment paper and let the shell harden for 10 minutes. Serve the same day.
