A traditional Turkish syrup dessert: walnut-filled cookies patterned on a sieve, baked golden and soaked in cold syrup. A classic for holidays and guests.
Ingredients
Instructions
- 1
For the syrup, bring the sugar and water to a boil, stirring, and simmer on low for 10 minutes. Add the lemon juice, boil for 2 minutes more and leave to cool completely.
- 2
Preheat the oven to 180 °C. In a large bowl, whisk the sunflower oil and egg; add the sifted flour, semolina and baking powder and knead briefly into a soft dough that doesn't stick to your hands.
- 3
Coarsely chop the walnuts. Pinch off walnut-sized pieces of dough, flatten in your palm, put 1 heaped teaspoon of walnuts in the centre, seal and shape into ovals.
- 4
Press and roll each piece lightly over a sieve or the fine side of a grater to pattern it, then place on a lined baking tray, spaced apart.
- 5
Bake at 180 °C for 25-30 minutes, until golden.
- 6
As soon as they come out of the oven, pour the cold syrup evenly over them and leave for 2-3 hours to soak before serving.
