Beef ribs slowly simmered for hours with potato, carrot and onion and finished with lemon. A brothy, high-protein dish served in bowls with its cooking liquid.
Ingredients
Instructions
- 1
Rinse the beef ribs, place them in a large pot with the water and bring to a boil over medium-high heat. Skim off the foam that rises.
- 2
Quarter the onion and add it to the pot. Simmer on low with the lid ajar for 1½-2 hours, until the meat comes easily away from the bone.
- 3
Cut the potato into large chunks and the carrot into thick rounds and add them to the pot with the salt and black pepper.
- 4
Cook for 25-30 minutes more, until the potato and carrot are tender.
- 5
Stir in the lemon juice just before taking off the heat. Divide the ribs, vegetables and broth between bowls and serve hot.
