Boat-shaped Black Sea flatbread topped with a spiced ground beef filling and an egg cracked in the centre, brushed with melted butter. A hearty main meal.
Ingredients
Instructions
- 1
Dissolve the dry yeast and sugar in the lukewarm water and leave for 5 minutes. Add the flour and 1½ tsp of the salt and knead for 8-10 minutes into a smooth, elastic dough. Cover and leave in a warm place for 1 hour, until doubled.
- 2
Finely chop the onion and green pepper and dice the tomato. Mix with the ground beef and the remaining salt to make the filling.
- 3
Preheat the oven to 250 °C with the baking tray inside. Divide the dough into 4 equal balls, cover and rest for 10 minutes.
- 4
Roll each ball on a lightly floured surface into an oval about 35x15 cm. Spread the filling down the centre, leaving a 2 cm border; fold the edges inwards and twist the ends to form a boat shape.
- 5
Slide the pides on baking paper onto the hot tray and bake at 250 °C for 10-12 minutes.
- 6
Take them out, crack 1 egg into the centre of each and bake for 3-4 minutes more, until the white is set and the yolk still slightly runny.
- 7
Melt the butter and brush it over the edges and tops; slice and serve hot.
