Ingredients

Instructions

  1. 1

Preheat the oven to 200 °C and line a large baking tray with parchment paper.

  2. 2

Peel the sweet potatoes and cut into 2 cm cubes; toss with half of the olive oil, half of the salt and half of the pepper, spread on the tray and roast for 20 minutes.

  3. 3

Meanwhile, snap off the woody ends of the asparagus. Rub the salmon fillets with the remaining olive oil, salt and pepper and the lemon juice.

  4. 4

Turn the potatoes and push them to one side of the tray; add the salmon and asparagus to the free space and roast for 12-15 minutes more, until the salmon flakes easily.

  5. 5

Cool for 10 minutes, then place one salmon fillet and a quarter of the sweet potatoes and asparagus in each container. Keep covered in the fridge for up to 3 days and reheat before eating.
